Champagne Savart, located in Montagne de Reims and helmed by Frédéric Savart. Frédéric Savart, a former professional footballer, abandoned his career to take over the family business in 2001, becoming a prominent winemaker in the Champagne region by 2005. He doesn't focus on typical "style," but rather dedicates much of his energy to faithfully representing the "territoriality." He describes his winery as more like a territorial laboratory, or a winemaking lab! 3.5 hectares are planted with Pinot Noir, and 0.5 hectares with Chardonnay.

The winemaking process follows the Burgundy family method: fermentation in small oak barrels (seven different sizes of oak barrels are used for aging, depending on the vintage and grape variety), batonnage during fermentation (to increase body and aroma), and no clarification or filtration!

😲 When I tasted L'Ouveture, my eyes lit up; aromas of smoky wood and green apple peel from Aomori Prefecture were immediately apparent. The initial acidity spreads across the front teeth and cheeks, slowly extending to the sides of the tongue. The most surprising aspect is the mouthfeel: a slightly powerful effervescence, a balanced structure, and well-spaced, multi-layered sensations. Each bubble, as it dances and settles, gently yet proudly covers the back of the tongue like a cloud, before slowly converging into a beautiful, concentrated line at the back.
